My BIG mistake.

Everybody makes mistakes. Right? I mean, it isn’t always intuitive, dealing with food allergies. This is what I have been telling myself since my mistake Saturday night.

My husband went into the hospital Thursday night with what we thought was a heart attack. It wasn’t, but he does need to watch his cholesterol. So I have been adjusting my cooking to accommodate his new diet. He and Damian really enjoy catfish but they usually like it fried. Since fried foods aren’t even close to healthy, I decided to bake it.

I breaded it first with a mixture of bread crumbs, parsley, oregano, basil, black pepper and Parmesan cheese. Yes. I said Parmesan cheese. I don’t know where my head was! The worst part about this? I didn’t even recognize my mistake until Damian had eaten half of his tainted food.

Ten minutes later the hives appeared and he began to itch. Then came the BM problems which have by now gone away, leaving a nasty case of eczema in it’s wake. And I feel terrible!I can’t believe I messed up like that! Parmesan cheese is one of the few dairy products I keep in the house. Of course it is because I cannot survive without my parm cheese but suddenly I feel like having it here is a mistake. I still can’t belive i screwed up like that!

  1. Thanksgiving this year…
    I decided it was ok to stuff the turkey with regular stuffing (Wheat only makes Emily a little itchy) as long as I gave Emily pieces of turkey from the outside that hadn’t touched it, a little careless I know. I diligently basted the turkey for hours. It wasn’t until after dinner that I realized the stuffing was made with a ton of butter and undoubtedly the butter had mingled with the basting juices! I was mortified that I could have made such a stupid and easily avoidable mistake! Believe me you are not alone. Just weigh all of your triumphs against your mistakes and know how amazing you are and how lucky Damian is to have you!

  2. I’m just waiting for a mistake to happen here now that Witt is starting to really eat more table foods. His first bday is Saturday and I’m working on his birthday cake. (I hope you like the frosting recipe!)

    What kind of bread crumbs do you use? Or do you make your own. All the ones I have seen contain some sort of milk product… :(

    I just ordered some “fake” Parmesan cheese from the veganstore.com … sounds like you might need to get some, too! :)

  3. Actually I can sometimes find generic ones that do not contain milk, but if that fails I just use seasoned toast crumbled up. I have to find out if Navan Foods carries fake parmesan.

  4. Just for the record, not that I want to discourage anyone, the fake parmesan that I tried was kind of yucky. It’s made by Galaxy Nutritional Foods. If you guys find one you do like please let me know.

  5. I can totally relate!!!! A couple months ago I handed my son a regular yogurt (not soy). HELLO??!!!??? I know it was the same brand that we always got soy yogurt in the past, but still. Thankfully we caught it early and it was okay. I’m glad you did too!
